Once the warm weather hits, my cravings shift from all things rich and hearty–chilis, casseroles, enchiladas, lots of protein and carbs–to lighter, more hydrating and veggie-ful dishes. Give me all the veggies these days!
Lately I’ve gotten back into baking, trying new dinner recipes and rediscovering old favorites. I’ve been cooking more vegetarian and vegan meals after my meat/eggs kick whilst exclusively nursing. Or, if I do cook meat, it’s more as another ingredient or condiment versus being the “main dish” on its own.
Today I just wanted to share a few of our recent favorite recipes–and one cookbook recommendation that I’ve been loving lately!
All of these recipes are gluten-free (of course) and 6/7 are dairy-free as well. Cooking for a celiac husband, gluten & dairy-free toddler and of course myself with IBS is always an adventure ;P
- Zucchini Bread Oatmeal Bake (GF & vegan): A super easy, healthy breakfast idea that’s full of green veggies but doesn’t taste like it! Little E loves this one.
- Oat Flour Banana Bread (GF & dairy-free): I made this when we hosted brunch a couple of weeks ago and wow is it good. Tastes just like normal gluten banana bread but is wayyy more wholesome.
- Summer Harvest Tortilla Soup (GF & vegan): So technically, this recipe isn’t the one I made–I think it’s her original recipe that she adapted for her cookbook. The Oh She Glows Cookbook is fantastic and lately I’m remembering how much I love every single recipe I’ve tried! I cooked a bunch from it when we lived in California.
- Easy Red Lentil Patties (GF & vegan): A perfect midweek meal for when you don’t have much fresh stuff in the house. I made a quick sauce with just yogurt, lemon juice, cumin and sea salt to go on top. They taste like falafel!
- Simple Meat & Veggie Pasta Sauce (GF): Yes I’m plugging my own recipe here 😛 but it’s so easy and good! You can serve it over white or brown rice, quinoa, or pasta–but I have a weird child who hates pasta, so I usually choose a whole grain.
- Soothing Red Lentil Soup (GF & vegan): I’ve also put this one on a favorite fall recipes list before because it’s just wonderful in any season! So simple, healthy, and makes a huge amount. I usually top with some tortilla chips because I like a little extra crunch.
- Ricotta Omelets (GF): Another long-time favorite recipe and it’s probably the easiest/fastest one on this list. I’m lazy and just sprinkle chopped tomatoes on top instead of making the whole vinaigrette.
And one bonus recipe for you that isn’t summer-specific: these jumbo GF & vegan chocolate chunk cookies. I’m obsessed (and so is little E). They are even better after being chilled in the fridge… don’t knock it ’til you try it.
