I haven’t done a meal planning post in a while, so here’s a look at what we’re eating lately! Our grocery bill continues to be wayyy above where I’d like it to be, even with buying a lot of essentials at Target… but perhaps that’s just the way life is these days.
One-Week April Meal Plan (Kid-Friendly!)
Saturday
- Breakfast: Apple cinnamon oatmeal + raw nuts
- Lunch: Smorgasbord with smoked salmon, raw cheese, GF crackers, strawberries + carrot sticks
- Dinner: Chicken tacos with sautéed rotisserie chicken/veg filling + avocado, salsa, and cheese on corn tortillas (we have this meal often on grocery day!)
Sunday
- Breakfast: Oatmeal with PB + bananas
- Lunch: Avocado toast with turkey bacon, raw cheese and fried eggs + fruit salad (apple/grapes)
- Dinner: Leftover rotisserie chicken stir-fry + rice
Monday
- Breakfast: Oatmeal with strawberries + raw nuts
- Lunch: Weekend dinner leftovers on greens/tortillas depending on the person!
- Dinner: sautéed beef, roasted potatoes + peas
Tuesday
- Breakfast: Healthy carrot muffins, yogurt + grapes
- Lunch: Weekend dinner leftovers on greens/tortillas
- Dinner: Leftover beef, roasted root veggies + salad
Wednesday
- Breakfast: Apple cinnamon oatmeal + raw nuts
- Lunch: Cottage cheese and veggie egg scramble, toast + turkey bacon
- Dinner: Lentil pasta sauce, GF pasta and raw cheese
Thursday
- Breakfast: Homemade granola, yogurt and fruit
- Lunch: Cottage cheese and veggie egg scramble, toast + leftover bacon
- Dinner: Leftover lentil pasta sauce, pasta and cheese
Friday
- Breakfast: Homemade granola, yogurt and fruit
- Lunch: PB sandwiches, fruit and veg
- Dinner: Homemade pizza!
For snacks lately we’ve been loving Cookie+Kate healthy muffins (we love the blueberry, carrot, zucchini and apple ones–all made with GF measure-for-measure flour!), dates stuffed with nuts/nut butter and maybe chocolate chips :D, fresh fruit/veggies, yogurt, cheese and crackers, and occasionally hot chocolate made with the gourmet mix my sister bought me for Christmas.
I do feel we’ve been spending more time on food prep than I’d like–so next month I’m keen to start batch/freezer cooking. I need to invest in a cookbook geared towards that cooking style as I’m aware (from experience lol) that the freezer absolutely destroys some foods!
I’m also eager to get back to the local farm we used to visit a couple times per month that sells their own raw milk and cream, eggs, whole chickens and ground beef. And of course the farmer’s market… but given that it’s supposed to snow again on May 1 (wtf weather!) I’m not holding my breath on that anytime soon.
