Oh, hi! Happy February. This month is going to be very busy: studying for my digital marketing exam, doing stuff with friends, prepping to start our garden, some side projects I’m working on (picking up my fiber arts again to help with our 2020 sustainable living goals), and Eric’s work is intense at the moment.
Oh, and we have a (teething) six-month-old. That’s what I spend most of my day doing right now. And I love being a stay-at-home mom, but I do get tired sometimes.
Anyways, because of all that, this might be the only recipe I publish this month. I promise it’s a good one, though!
This healthy bolognese an easy and wholesome way to get some yummy Italian flavors into your bowl. Like many of my recipes, it’s a classic with a healthy twist. It’s gluten-free, refined sugar-free, and packed with veggies (but you wouldn’t even know it!).
It’s also incredibly adaptable to whatever meat and veggies you have on hand. I include some suggestions below, but feel free to personalize it with your favorites. Bon appetit!
Easy & Healthy Bolognese Sauce (Gluten-Free)
Makes 5 hearty servings
Ingredients:
- 1 lb. bulk Italian chicken/turkey sausage
- 1 medium onion, diced
- 1 1/2 c. chopped fresh or frozen vegetables of choice*
- 25 oz. jar of sugar-free marinara sauce**
Instructions:
- First, get your pasta or grain of choice cooking so that everything finishes at the same time!
- Preheat your frying pan over medium heat until water sizzles in the pan.
- Add your meat and cook until no pink remains.
- Then, add your onion and other vegetables. Cook until the onion has softened.
- Finally, add the marinara sauce. Heat until bubbling, then reduce heat to low and simmer for 10 minutes.
- Serve over pasta, rice, quinoa, or another carb of choice. If you aren’t dairy-free, top with parmesan!
* I really just throw in whatever we have on hand! Bell pepper, mushrooms, spinach, tomato, carrots, frozen peas, etc. Make it your own!
** I use the Whole Foods organic brand of marinara sauce, but there are many sugar-free options out there (just check the label before buying).
