We have had the most insane week so you’ll have to excuse the lack of posts lately–and the fact that I’m posting at 8pm on a Friday! Between preschool Halloween festivities, the actual holiday, kindergarten applications, a minor medical procedure (no worries, I’m fine!) and more, I’m feeling more frazzled than usual after this week.
But let’s chat about life lately and November plans. Can you believe Christmas is next month?!
Realization lately: That I am the worst at doing nothing. I had to rest for 24 hours after the procedure (not even full bedrest, just taking it easy) and I was bored about three hours in. I caught up on Daily Connoisseur YouTube videos, watched last year’s Great British Baking holiday special, bought all of the kids’ Christmas gifts and stocking stuffers, called my dad, went to bed early… and woke up with somehow five more hours…
Buying lately: Allllll the Christmas gifts. But in non-Christmas shopping: this skirt to wear for our family photos next weekend, extra mittens for the kids since it snowed earlier in the week, and slim-fit pants for my middle child because I was tired of constantly yanking up his pants. I have two giant babes (kids #1&3) and one peanut, so hand-me-downs don’t always work!
Cooking lately: Parmesan smashed potatoes on a weekly basis. I use this recipe except I peel the potatoes (vegetables are so gross here in the winter and I need to see the bad spots to cut out -.-). I also add a few tablespoons of cream because Eric doesn’t like his mashed potatoes that dry. Sooo fluffy and good.
Above is a lovely lunch I enjoyed earlier this week: leftover bell pepper and cheddar quiche filling, made into a mini crustless quiche; leftover potatoes; and a clementine.
Wondering lately: Who’s going to be eliminated on tonight’s Great British Bakeoff?! I feel like they’re all pretty skilled at this point. No spoilers please!!!
Looking forward to in November: Our family photoshoot, being done with kindergarten apps/info nights, Thanksgiving with family, my 29th birthday. I’m hoping we can get out for date night, too. We were SO good about that early in the year but we haven’t been out alone since June!
