There are buds on the trees, the sun is warm, and the birds are singing. I feel insanely lucky that we skipped the toughest part of winter this year and went straight into another warm season. It’s probably not a good sign for the climate, but even knowing that, my mood is so lifted by the weather.
We had a packed week, hence no other posts!
Cooking lately: buckwheat banana muffins for easy breakfasts + creamy chicken pesto pasta for Monday dinner. We used leftover chicken–just threw it in towards the end of cooking the sauce–12oz of GF pasta rather than 8, and subbed sharp cheddar for the Parmesan since we were out. Wow. Not a light dish at all but classic comfort food. All the kids ate some so it’s a win!
Weekending lately: We were out of the house most of last weekend between errands, time outside, and a family dinner at a favorite restaurant. We’ve only been out with the five of us once before! We went to Salut (French restaurant) and the kids ordered burgers or grilled cheese with veggies off the kids’ menu. Eric had a burger and I tried a new chicken dish. Everyone enjoyed their food. We ordered a couple desserts to share and headed home by 6:30–no mess, no meltdowns, everyone full and happy 🙂
Do I think every meal out will go as smoothly? Definitely not lol. But I’ll take what I can get. We even had the house professionally deep-cleaned earlier in the day, and a day off from cooking and cleaning was *chef’s kiss.*
Buying lately: Some silly novelty socks from Target, because I needed some non-wool socks and they made me happy. My favorite pairs have cats hugging coffee cups and eggs & bacon 😛
Looking forward to lately: The pool opening in a couple of months. More 60-degree weather next week. Planning our Australia vacation for the end of the year! My mind is living somewhere tropical and summery lately and I don’t mind a bit.
As Fiona Ferris says, it’s important to stay informed and grounded to live your daily life. But it’s okay to spend your time alone, your private moments, in a mental place that inspires and encourages you. Even if that place is far away from your real home in distance or time 🙂
And yep… I didn’t take any pictures this week (that weren’t of the kids) so nothing to share today.
