Oh, hi! Happy February. This month is going to be very busy: studying for my digital marketing exam, doing stuff with friends, prepping to start our garden, some side projects I’m working on (picking up my fiber arts again to help with our 2020 sustainable living goals), and Eric’s work is intense at the moment.… Read More »
What is the Environmental Impact of Coffee Pods?
I have a six-month-old, so, coffee… it’s been on my brain a lot lately. I don’t actually own any type of coffee maker at the moment. And you know what’s appealing when you’re short on time in the mornings? A Keurig or Nespresso machine. They were made for busy mums.
Plus, those little pods are recyclable, right? My dad and stepmom have a Nespresso machine. I remember having bags of used pods rattling around in the backseat when I borrowed his car in high school. So they’re environmentally friendly… right… right?… Read More »
Carrot Cake Muffins (Gluten-Free & Dairy-Free)
A couple of weeks ago, for Eric’s 25th birthday, I made a gluten-free carrot cake with loads of brown sugar, molasses, nuts, raisins, shredded coconut, and of course cream cheese frosting. Our everyday routine started to feel a bit monotonous. “The days are long, but the years are short,” as Gretchen Rubin writes. The days are long, indeed.… Read More »
Healthy Pumpkin Baked Oatmeal Cups (Gluten & Refined Sugar-Free)
Happy Wednesday, friends. I’m off on my weekly coffee-date-with-myself to work on digital marketing stuff, so it is indeed a happy morning. Time to myself is very valuable now that I’m a mom! And an almond milk mocha and slice of pumpkin bread don’t hurt, either.
But at any rate, first I’m popping in with an easy and delicious recipe for you!
