Lately the mornings here have been pleasantly crisp. You know, when you step outside and realize you need a sweatshirt–but walking down the street doesn’t freeze your ears off, it simply makes a hot cup of coffee more appealing once you’re back inside? The best kind of weather, in my humble opinion.
Along with the changing seasons I’ve felt re-inspired in the kitchen lately. In September already, I/we have made two kinds of chili, our favorite mushroom cheddar baked pasta, apple crisp, pumpkin muffins, chicken mushroom casserole, lemon sugar cookies and there’s probably more I’m not thinking of right now.
So what’s left on my to-cook list? Lots of things! I was browsing the Southern In-Law A to Z recipe page the other day and got so many new ideas. I also need to use up some garden produce from my mom and have a few more old favorites on my list, too. So here’s some cooking inspiration for your fall kitchen!
Fall Breakfast Recipes Ideas
- Creamy Custard Oatmeal Bowl–The perfect nutrient-dense breakfast for little ones (and mamas too!). Maybe I can get my two-year-old to eat eggs this way? Sorry, I’ll stop reaching for the impossible.
- Single Serve Banana Chocolate Chip Breakfast Bake–Somehow there’s an SIL breakfast bake recipe I haven’t tried yet. This one looks delicious and packed with protein, too!
- Easy Butternut Squash Pancakes–These are made in the blender and they are amazing. They’re high in protein, full of veggies and my kids love them.
- Gingerbread Granola–This looks like it would smell amazing whilst cooking and it’d be a great consumable holiday gift, too.
Fall Dinner Recipes Ideas
- Savory Chicken & Pesto Crepes–I haven’t eaten a crepe since college, when my friend L was a crepe pro making them for a crowd. This is a great easy and light dinner idea.
- Healthy Creamy Potato Leek Soup—Looove me some potato leek soup and it’s a healthy version to boot!
- Dutch Oven Roast Chicken & Vegetables–I’ve tried several roast chicken recipes through the years and this one is the winner for me. Roasting the chicken at a higher temperature at the beginning seals in the juices, and it’s truly a one-pot meal as all the veggies roast underneath at the same time.
- One Pot Chicken Parmesan Pasta–I’ve never tried a one-pot pasta dish like this before and this one seems like a tasty start!
- Butter Chicken Meatballs–Apparently we’re going to be eating a lot of chicken this fall…
Fall Baking Recipes Ideas
- Lightened Up Chocolate Buttermilk Cake–I’ve been assigned to make a non-chocolate cake for K’s first birthday this week (the older kids always pick chocolate, much to Eric’s chagrin)… but this one will be coming up soon for sure.
- Healthy Gluten-Free Zucchini Bread–My mom brought over a MASSIVE zucchini from her garden the other day so I’ll be making a couple loaves of this to freeze for the winter.
